Backcountry Cookbook

Simple trail tested recipes.
This is a companion to . If you don’t feel like coming up with your own menu ideas based on that, try one of these. This is a collection of simple recipes that are trail tested and proven to taste good. All ingredients can be purchased at most grocery stores.
If you use some of these recipes on your trip, be sure to augment the overall menu with additional snacks etc as described on .

PORTION SIZE: Unless otherwise marked, all recipes are sized for 2 people, simply scale up as needed for the size of your crew.

🥣 Breakfast

Banana Pudding Oatmeal

INGREDIENTS
6 packets of plain instant oatmeal
1 pack of freeze dried fruit
1 pack of banana pudding mix
OPTIONAL: 2 tablespoons chocolate chips
INSTRUCTIONS
Boil about 1.5 times more water than the package instructions call for
When water is boiling, lower heat and add the oatmeal.
When oatmeal thickens (it will be on the soupy side), add pudding mix and stir thoroughly
Serve into individual plates
Add half of freeze dried fruit (and optional chocolate chips)

Cheesy Potatoes

This hearty breakfast can also work as a dinner.
INGREDIENTS
1 package instant mashed potatoes
2 individually wrapped cheddar cheese sticks
One of:
2 servings cooked/crumbled bacon (buy pre-packaged bacon bits or cook/crumble 1-2 pieces of bacon per person at home)
2 servings salami or pepperoni
INSTRUCTIONS
Prepare the mashed potatoes according to package instructions
Serve into individual plates
In your plate, break up the cheese stick into small pieces and stir to melt
Top with half of the bacon bits or salami/pepperoni

🥪 Lunch

Backcountry Charcuterie

INGREDIENTS
2 individual personal sized sleeves of crackers (e.g. Ritz or Townhouse both offer this)
4 individually wrapped cheddar cheese sticks
2 servings salami or pepperoni
INSTRUCTIONS
Give each person a sleeve of crackers, 2 cheese sticks, and 1 serving of salami/pepperoni
Assemble and eat

Honey Banana Tortilla Wraps

INGREDIENTS
2 bananas
2 large or 4 small tortillas (flour)
2 small ziplock bags that each have 2 servings of peanut butter and 1 serving of honey
INSTRUCTIONS
Peel banana
If using large tortilla, place whole banana in tortilla; if using small tortillas, break banana in two and place half in each tortilla
Spread peanut butter/honey in tortilla
Wrap up & eat

🥘 Dinner

Chicken Alfredo

INGREDIENTS
1 packet Knorr Alfredo pasta
4 foil packets chicken
2 servings of grated parmesan cheese
Optionally: 1-2 TBSP of butter
INSTRUCTIONS
Cook pasta according to packet instructions using only water (omit optional oil & milk)
When pasta is cooked, lower heat and add chicken (if using butter add it now)
After 30-60 seconds turn off stove, wait for 2-3 minutes and serve into individual plates
In your plate, stir 1 serving of the grated parmesan cheese

Chicken & Rice

INGREDIENTS
1 packet Knorr Chicken rice (really any flavor of Knorr rice can work for this)
4 foil packets chicken
INSTRUCTIONS
Cook rice according to packet instructions using only water (omit optional oil)
When rice is cooked, lower heat and add chicken
After 30-60 seconds turn off stove, wait for 2-3 minutes and serve into individual plates

Mac & Cheese

INGREDIENTS
1 packets Knorr Cheesy Cheddar Pasta
2 individually wrapped cheddar cheese sticks
2 servings salami or pepperoni
Optionally: 1-2 TBSP of butter
INSTRUCTIONS
Cook pasta according to packet instructions using only water (omit optional oil & milk)
When pasta is cooked, lower heat and butter if using, along with cheddar cheese and salami or pepperoni
After 30-60 seconds turn off stove, wait for 2-3 minutes and serve into individual plates

Spanish Rice & Chicken

INGREDIENTS
1 packet Knorr Spanish rice
4 foil packets chicken
2 individually wrapped cheddar cheese sticks
2 servings of chili Fritos (or doritos/corn chips)
INSTRUCTIONS
Cook rice according to packet instructions using only water (omit optional oil)
When rice is cooked, lower heat and add chicken
After 30-60 seconds turn off stove, wait for 2-3 minutes and serve into individual plates
In your plate, break up the cheese stick into small pieces and stir to melt
Top with 1 serving of Fritos/chips
